The Five Flavours

五味

Wǔ wèi

A chapter of correspondences, and the most concrete in the book. It begins with the stomach as the sea of the viscera and follows the five flavours to the five organs: sour to the liver, bitter to the heart, sweet to the spleen, pungent to the lung, salty to the kidney. The same movement supplies the nutritive and guarding qi, and the residue is passed down as dregs. There follows the longest catalogue in the Lingshu: five grains, five fruits, five animals, five vegetables, each assigned a flavour, and then the five colours of food, the five suitabilities for the diseased organ, and the five prohibitions. The lists are meant to be used at table, not merely contemplated. The prohibitions run the same phase logic in reverse: what the organ's phase cannot bear is withheld. The liver, being wood, is forbidden the pungent, which belongs to metal, the phase that cuts it.The final section gives a second, different rule — what each organ should eat when its colour is disordered — which does not contradict the first but answers a different question. The chapter closes with a reminder that the essence of heaven and earth goes out three parts for every one taken in, so that going without grain weakens a person within a day.

Huáng Dì yuē: yuàn wén gǔ qì yǒu wǔ wèi, qí rù wǔ zàng, fēn bié nài hé?
The Yellow Emperor said: I should like to hear how the five flavours of grain qi enter the five viscera, and how they are distributed.
Bó Gāo yuē: wèi zhě, wǔ zàng liù fǔ zhī hǎi yě. shuǐ gǔ jiē rù yú wèi, wǔ zàng liù fǔ jiē bǐng qì yú wèi, wǔ wèi gè zǒu qí suǒ xǐ. gǔ wèi suān, xiān zǒu gān; gǔ wèi kǔ, xiān zǒu xīn; gǔ wèi gān, xiān zǒu pí; gǔ wèi xīn, xiān zǒu fèi; gǔ wèi xián, xiān zǒu shèn. gǔ qì jīn yè yǐ xíng, yíng wèi dà tōng, nǎi huà zāo pò, yǐ cì chuán xià.
Bo Gao said: The stomach is the sea of the five viscera and six palaces. Water and grain all enter the stomach, and the five viscera and six palaces all receive grain qi from it. Each of the five flavours goes to the viscus it favours: the sour goes first to the liver, the bitter to the heart, the sweet to the spleen, the pungent to the lung, the salty to the kidney. When the fluids of grain qi have moved and the nutritive and guarding qi are freely open, the dregs are separated out and passed down in order.
Huáng Dì yuē: yíng wèi zhī xíng nài hé?
The Emperor said: How do the nutritive and guarding qi move?
Bó Gāo yuē: gǔ shǐ rù yú wèi, qí jīng wēi zhě, xiān chū yú wèi zhī liǎng jiāo, yǐ gài wǔ zàng, bié chū liǎng xíng, yíng wèi zhī dào. qí dà qì zhī tuán ér bù xíng zhě, jī yú xiōng zhōng, mìng yuē qì hǎi. chū yú fèi, xún hóu yān, gù hū zé chū, xī zé rù. tiān dì zhī jīng qì, qí dà shù cháng chū sān rù yī, gù gǔ bù rù, bàn rì zé qì shuāi, yī rì zé qì shǎo yǐ.
Bo Gao said: When grain first enters the stomach, its refined part emerges first from the two burners of the stomach to irrigate the five viscera, and a separate course branches off as the way of the nutritive and guarding qi. The great qi that gathers and does not move accumulates in the chest and is called the sea of qi. It issues from the lung and follows the throat, so that it leaves on exhalation and enters on inhalation. Of the essence of heaven and earth, the general rule is three parts out to one part in; hence if grain does not enter, qi fails within half a day and is scant within a day.
Huáng Dì yuē: gǔ zhī wǔ wèi, kě dé wén hū?

Textual notes

Readings follow the base edition; significant variants are recorded here.
